Drawing on the flavours of a childhood immersed in the Piedmontese and Basque culinary traditions of his father and grandfather, chilean-born Gonzalo Luzarraga isn’t afraid to cross borders in his relentless pursuit of culinary perfection.
Gonzalo’s extraordinary kitchen adventures have taken him all over the world. Career highlights include three-Michelin-star Louis XV in Monaco, where he trained under Alain Ducasse; Le Clivie in Northern Italy, where he was awarded a first star of his own; and Viennese Kuchlmasterei, where he picked up his second.
Gonzalo’s fortnight with us is a preview of his exciting new project, Mater, which will open in London later this year. On the menu are elegant and wonderfully balanced dishes like Gonzalo’s “Omaggio a Bottura” (AKA focaccia and mortadella foam), a wonderful-sounding ‘spaghettone’ with anchovy garum and a rather special piece of Pluma Ibérica de Bellota from our friends at Txuleta, paired with oyster, parsnip, bottarga.
