In the impossibly beautiful Tuscan city of Lucca, three young friends – Benedetto Rullo, Lorenzo Stefanini and Stefano Terigi – have been shaking things up with a progressive Italian cuisine that’s all their own.
Incorporating classical French techniques and influences from further afield (a nod to their combined experience in some of the world’s best restaurants, from Relæ in Copenhagen to Ryugin in Tokyo), the trio’s Michelin-starred menu changes quarterly with the seasons, and features avant-garde creations like ‘Vin Jaune and Comté Trottole’ (their take on cacio e pepe); ‘Grilled Oyster, Pine Nuts, Mushrooms, Seaweed’; and ‘Tarte au Sucre, Gianduja, Zabaione’.
Giglio has been a local favourite since 1979, and while the offering remains steeped in Tuscany’s unique terroir, Benedetto, Lorenzo and Stefano’s approach is a little more rock and roll these days. In their own words, “if Giglio were a song, it would be London Calling by The Clash; like us, they’re a band, but it’s the way they successfully merge several genres into one project with that album that really resonates”.
