With an enviable tash and an immaculate résumé that includes Geranium (Copenhagen), Fera at Claridge’s (London) and Hytra (Athens), George Kataras is the preternatural talent who guided Amsterdam hotspot Vanderveen to a Michelin star within two years of opening.
In a cruel twist of fate, the Beethovenstraat restaurant closed its doors just one month after the announcement. Fortunately, for fans of George’s extraordinary cooking, the main man is already onto his next adventure. Having spent the summer back home in Greece flexing his signature style of flawlessly executed, produce-driven cooking at some of the country’s most celebrated restaurants, he’ll be ending the season with five nights at Carousel.
‘Refined yet funky’, George’s highly original menu plays with textures and temperatures, bringing the very best out of classical seasonal ingredients. Highlights among George’s seven gorgeous courses include ‘Chickpea Waffles, Cod’s Roe, Herbs’; ‘Poached Cod, Collard Greens, Lemon Sabayon’; ‘Guinea Fowl, Turnips, White Peach’; and ‘Warm Brioche, Cardamom, Barbecued Figs’.
