From the restaurant’s emerald-tiled open kitchen, head chef and passionate surfer Federico Sisti rides the wave between tradition and innovation. Federico’s ever-evolving, seasonally-led menu features perfectly executed, contemporary versions of traditional regional classics from Lombardy and neighbouring Emilia-Romagna. Think ‘Lasagne Verde, Duck Ragu’; ‘Pumpkin Risotto, Taleggio, Hazelnuts’; and ‘Veal Shoulder, Mushroom Cacciatore’.
