Argentine Facundo Gallardo Saavedra lives, breathes and eats all things wild.
After spending more than a decade perfecting fine dining techniques in some of the world’s most illustrious kitchens – including Santiago’s multi award-winning Boragó and Copenhagen’s two Michelin-starred Kadeau – Facu has gone back to his roots, settling down in the rugged, picturesque Patagonian town of El Bolsón.
Surrounded by nature, there Facu and his partner Gretel lead small groups on local foraging trips that culminate in an unforgettable hyper-seasonal, hyper-local tasting menu experience featuring wild ingredients, magical flavours and impeccable technique. When they’re not hosting these intimate dinners, they couple make their own sourdough, charcuterie, kombucha and preserves to sell to lucky passers by.
Facu joins us for a week in November with a suitcase full of foraged delights in tow, including arrayanes (a local berry) and morel mushrooms, so you can get a taste of the Patagonian wilderness from the comfort of our Charlotte Street dining room.
On the menu? Beauties like ‘Wild Mushrooms, Rosehip Sriracha, Chilean Myrtle’; ‘Dry-Aged Beef, Pine Nuts, Smoked Bread Miso’; and ‘Peaches, Cultured Cream, Jerusalem Artichoke Milk Caramel’, all popping with the intense umami flavours of Facu’s homemade garums and ferments.
