Meet the rather brilliant Evgeny Vikentev, one of the genuine pioneers of modern Russian gastronomy. At Hamlet & Jacks, a play on the names of the owners, Evgeny is on a mission to introduce his diners to the best his country has to offer.
Scallops from Murmansk, crab from Kamchatka… He scours the length and 10,000km breadth of Russia in search of its tastiest produce, which he serves up on a surprising and playful menu of two halves: ‘Ours’ (modern interpretations of traditional recipes) and ‘Ours + Theirs’ (Russian ideas supercharged with ingredients from around the world). The result is a totally new style that demands attention.
With experience under his belt at some of the old capital’s finest establishments, along with stints at Albert Adria’s bonkers but amazing 41° in Barcelona and Michelin-starred Il Vescovado in Liguria, Evgeny is the real deal.
