Reimagining familiar Asian flavours one Vegemite-glazed satay skewer at a time, Borneo-born Aussie, Esca Khoo, has been making waves across Asia-Pacific with his genre-defying cooking.
Esca’s menus are a playful marriage of culinary cultures on a plate, with dishes like ‘Kadazan-Dusun Halibut Hinava, Gooseberries, Trout Roe’; ‘Sarawak Pork Red Kolo Mee, Alliums & Slow Cooked Hen’s Egg’; and ‘Kalimantan Banjareres Spice-Braised Duck,Grilled Summer Tomatoes, Wild Rice‘ epitomising the kind of bold, imaginative flavours he’s become known for.
Esca spent his formative years working under heavy-hitters like René Redzepi, Heston Blumenthal and Andre Chiang, before going it alone. Since then, he’s been popping up in stellar kitchens like Eat & Cook (Asia 50 Best, #79); A by Tung (Asia 50 best #98), Au Jardin (one Michelin star) and iconic Mumbai restaurant Masala Library (50 Best Discovery), dazzling diners with his signature ‘half my life in Australia and half my life in Malaysia’ gastronomy.
As he finalises plans for a first solo opening in Asia, Esca brings his infectious, high-energy style to London for the latest leg of a guest chef odyssey that’s taken him from Hanoi to Kuala Lumpur.
