Heading back to the capital after a healthy stint at the seaside, Vancouver born Emily Chia is joining us for a one off collaboration in our Wine Bar.
After cutting her teeth as sous at St. JOHN and Joe Beef in Montreal, Emily moved on to become head chef at Le Grain Bain in Paris and most recently Sargasso in Margate. Having established her ‘genre-fluid’ style in some inarguably iconic kitchens, her approach to new projects is refreshingly simple: “I can be found cooking how I like to eat – with good music and in good company.”
Emily will be collaborating with Ollie and José on a nouveau French bistro style menu full of classics and new twists. Bring it on.
