Carousel's 10th Birthday

15th – 19th October

To mark ten years of guest chef residencies, we’ve invited a few of our favourites from over the years to join us for a weeklong kitchen party. We’ll be cooking with a different friend every night, so it’ll be like Carousel, only more “ADHD” (credit: YouTube). Come and celebrate with us as we reflect on 350 residencies and a lifetime of negronis memories.

First up it’s the return of smashburger supernova, Chuck George. If you experienced the ‘no modifications’ magic of Chuck’s NYC in No. 23 earlier this year, you’ll know what all the fuss is about. “Burgers so good we eat them ourselves”… You’re damn right we do.

Sok is Carousel family. Our one-time junior sous is busy opening a place of his own in Paris, where his “off the cuff” bistronomie has earnt a genuine cult following at Aux Deux Amis and a string of sell-out pop-ups. Weaving in his Cambodian heritage, dishes like ‘KFC Sweetbread’ have put Sok on a path to superstardom.

It’s time to announce our special guest—our very own head chef, José. Often behind the scenes, he’s at the heart of what we do here. Without him, we couldn’t host a new guest chef each week. Now it’s our turn to celebrate his skill and everything he’s picked up from the 120-odd chefs he’s worked with in this very room. This is a very, very special menu. Don’t miss it.
