Forget everything you thought you knew about Tijuana. 

Lapping the shores of the Pacific, the city is fast gaining recognition as a vibrant culinary destination thanks to its world class seafood. Leading the charge is José (‘Joe’) Figueroa and his award-winning Carmelita Molino y Cocina.

Fresh from securing his Bib Gourmand in Mexico’s inaugural Michelin Guide, José’s menu celebrates the bounty of Baja with a modern twist, featuring dishes like ‘Cornish tuna warayaki with salsa tatemada and tostadas’, and his generous Baja seafood platter (think ‘scallop with ginger scallion sauce and preserved lemon’; ‘shrimp and seaweed escabeche tostada’; ‘cockle ceviche with aioli’; and his unforgettable ‘oyster and spicy fish tartare’). We did say generous…

Expect a flavourful journey that honours his family roots. Carmelita, the restaurant’s namesake, is inspired by the warmth and traditions of José’s grandmother, whose love of cooking ignited his passion for the craft. José combines that heritage with top-notch culinary training (including time at the three-Michelin-starred L’Enclume) and a fierce commitment to sourcing the best regional ingredients. 

This is more than a menu, it’s a reflection of Tijuana’s ever-evolving spirit, blending bold flavours with time-honoured traditions. Come hungry, leave inspired.
