Fresh from securing his Bib Gourmand in Mexico’s inaugural Michelin Guide, José’s menu celebrates the bounty of Baja with a modern twist, featuring dishes like ‘Cornish tuna warayaki with salsa tatemada and tostadas’, and his generous Baja seafood platter (think ‘scallop with ginger scallion sauce and preserved lemon’; ‘shrimp and seaweed escabeche tostada’; ‘cockle ceviche with aioli’; and his unforgettable ‘oyster and spicy fish tartare’). Carmelita, the restaurant’s namesake, is inspired by the warmth and traditions of José’s grandmother, whose love of cooking ignited his passion for the craft. José combines that heritage with top-notch culinary training (including time at the three-Michelin-starred L’Enclume) and a fierce commitment to sourcing the best regional ingredients.
