Carlo Scotto is back.

At Xier, Carlo’s relentlessly creative, hyper-original tasting menus earned him rave reviews (“how I hope heaven will be“) and an instant following of enthused Marylebone locals, us included. Now the charismatic young Neapolitan is picking up where he left off pre-2020 with the upcoming launch of Amethyst in Mayfair.

Carlo’s latest project features the same unusual flavours and experimental techniques that have become his hallmark, marrying Japanese and Scandinavian influences with carefully sourced, ethically grown British produce to create knockout dishes like the ‘Nasu Nibitashi Aubergine Gyoza & Liquorice Tea’ and ‘Caramel Black Cod & Roscoff Dashi’ on his Carousel menu.

Mentored by former employer, Angela Hartnett, Carlo’s inimitable style draws heavily on his travels, which are all about discovering the cultures behind the ingredients that later appear on his theatrical menus.

Expect killer flavours, razor-sharp technique and plenty of surprises from one of London’s hottest talents.
