It’s been an incredible year for Scottish super talent, Tomás Gormley, since he joined us last year with fellow Heron co-founder, Sam Yorke, in celebration of Rabbie Burns. Not only were the pair awarded a well-deserved Michelin Star just two months later, in recognition of their beautifully-executed, farm-to-table tasting menus, but Tomás has since opened sister venture, Skua.
Tomás joins us on the 26th with a taste of what the new restaurant is all about. Set in a moody candlelit basement in Edinburgh’s Stockbridge, Skua – another native seabird – has a more casual, wine bar-style vibe, with a small-but-perfectly-formed menu of seasonal beauties that draw on global influences whilst still showcasing the very best local Scottish produce. Think ‘Hand-Dived Orkney Scallops, Aberfeldy Whisky Ponzu, Blood Orange, Wasabi Peas’; ‘The Free Company Scottish Lamb Belly, Harissa, Aubergine’; and ‘Spiced Apple Cranachan’.
