Canadian-Jamaican chef Bill Allison has been heading up the kitchen at Amsterdam’s effortlessly cool Public Space for just shy of two years. Within that time, he’s put it firmly on the map as a star of the city’s food scene, with an eclectic small plates menu that takes inspiration from every step of his culinary journey so far.
Bill has been cooking for as long as he can remember. Starting in his dad’s Jamaican takeaway, he trained at culinary school in Toronto before hopping on a plane to London and landing a position at Taiwanese sister restaurants XU and BAO. Equipped with these years of experience, he then moved to Amsterdam to become sous chef and all-round right-hand-man to Alex Haupt at 101Gowrie, before taking the reins at Public Space.
In his spare time, Bill flexes his own style of ‘rustic yet refined’, loosely Jamaican and East Asian-influenced cooking at sell-out pop-ups across Europe, from Paris to Istanbul. Next up, London, where his Carousel menu promises ‘fun, flavour and feeling’. Highlights include mackerel tartare with harissa, shisho and nori; kohlrabi with pistachio tahini and salsa macha; and his signature jerk mallard with mushroom rice.
