Michelin-starred Galway institution Aniar (meaning ‘From the West’) has been delighting diners for over a decade with its immersive multi-course tasting menus that showcase the unique terroir of Ireland’s West Coast.
Leading the kitchen, chef-owner JP McMahon’s ethos is all about ‘looking back in order to look forward’. A prominent advocate for local food and sustainability, JP draws on ancient cooking and preservation methods like curing, pickling, smoking and fermenting to get the very best out of wild, foraged and local ingredients in his ever-evolving tasting menus. It is this dedication to unlocking the very best of the local landscape on the plate that earned Aniar a Michelin Star in 2013, which it has retained ever since.
With a schedule that includes heading up two of Galways’s most popular restaurants – Aniar and Cava Bodega – as well as Aniar Boutique cookery school and world renowned gastronomy summit, Food On The Edge, we’re extra pumped that JP has taken the out to join us for five nights at Carousel. Expect to be wowed with a multi-course, multi-sensory tasting menu of contemporary Irish cooking at its very best from one of the country’s true culinary trailblazers.
