Two years on from her last Carousel appearance, we were delighted to welcome Akané Monavon back into the fold.
Born in Burgundy to a French father and a Japanese mother, Akané is a chef with a truly international perspective. Working under legends like Virgilio Martínez and Dominique Crenn, she’s spent the last fourteen years cooking in renowned kitchens the world over – New York, Tokyo, Paris, London, Reykjavik, San Francisco and Lima – developing a laid back, French-Japanese style that’s delicate, understated and out-of-this-world delicious.
Akané joined us following a successful six-month residency at Fulgurances in Paris, where she’s set to open her first permanent restaurant later on this year. On the menu this time round?
