We’ve opened a neighbourhood wine bar. Our crowd-pleasing menu of seasonal snacks and small plates is accompanied by a lively selection of minimal intervention wines and some of our all-time favourite cocktails. Drop by for lunch or dinner.

Menu highlights this week include ‘Wye Valley Asparagus, Wild Fennel & Smoked Eel’, ‘Miso Poached Skate, Dashi Butter Sauce’ and ‘Herdwick Lamb, Smoked Anchovy & Grilled Cucumber’. Hell. The. Eff. Between them the pair have risen through the ranks of acclaimed kitchens like River Café (London), Pauly Saal (Berlin) and L28 (Tel Aviv). Now they are making serious waves of their own at Alena, Tel Aviv, where their colourful ingredients and bold flavours have taken Israel's culinary capital by storm.

Coming up... ​Omer Shadmi & Daniel Zuur  ​@omershadmimuller ​@daniel_zuur ​7th – 11th June ​Lifelong friends and 2020 Carousel alumni, Omer Shadmi and Daniel Zur, have taken Israel’s culinary capital by storm as the joint heads chefs of Alena at The Norman Hotel, Tel Aviv. ​Pals Omer and Daniel grew up together in Israel’s Jezreel Valley. Between them the pair have risen through the ranks of acclaimed kitchens like The Barbary and River Café (London), Pauly Saal (Berlin) and L28 (Tel Aviv). Now they are making waves of their own, weaving together Israeli and Middle Eastern influences and showcasing their love of fresh, colourful ingredients and bold flavours. ​Think ‘road style’ bagels with two different toppings (zaatar, and sumac onions; and grated tomatoes and spicy mashwia); grilled gem lettuce, hot yoghurt sauce, brown butter and almonds; and Galilee egg yolk raviolo, feta cheese, aubergine oregano butter and lemon. ​Omer and Daniel’s food is designed to be shared between friends and mopped up with pillowy flatbreads straight from the oven.  We've changed up a few of the dishes in the wine bar this week, starting with this delicious plate... ​Barattiere cucumber, peas, broad beans, basil, breadcrumbs.  ​ ​​We reckon it's summertime on a plate, but don't just take our word for it. The wine bar is open Tuesday - Saturday from midday, come down and give it a try.

 The secret’s out. East Coast burger slingers @eatluckybunz are moving into No. 23, our new home for long-term residencies from our friends from around the world... Purveyors of DC’s “juiciest stacks”, Lucky Buns is the brainchild of our buddy @chefalexmccoy, who blew the doors off the old Carousel not once but twice with his hellishly spicy @alfiesdc pop-up. From the middle of June, our twelve-seater side hustle will be home to Lucky Buns’ first opening outside the US, serving up “juicy burgers, frosty frozen cocktails and rad jams” from midday until late, six days a week. Not all buns are created equal. Accompanying LB favourites like ‘Mumbo Nugs’, ‘Dirty Cadillac Nachos’ and ‘Loco Moco Fries’ (the secret’s in the Hawaiian curry gravy), we’re bringing you some of America’s tastiest burgers, regularly ranked among the country’s very best. We’re talking the classic ‘Lucky Bun’ (double beef patties, gouda cheese, Lucky sauce, rocket, charred red onion, house dill pickles), the savage ‘Hot Tiger Bun’ (crispy fried chicken thigh, spicy AF habanero-Szechuan chilli oil, buttermilk ranch, Chinese mustard, shaved onion, house dill pickles) and the heavyweight ‘Bogan Bun’ (double beef patties, gouda cheese, streaky bacon, bacon XO jam). If you’re watching your figure, there’s a menu of killer cocktails for you to choose from. Some frozen, all damn tasty. Fans of Goila Butter Chicken can still find Mumbai’s favourite (and ours) on @deliveroo and @thedishpatch, who are delivering Saransh’s liquid gold to homes around the UK *twice a week*. A huge thank you to the GBC team for six incredible months of butter chicken dreams in No. 23. We’ll be first in line for the opening of the next one.

Reading through it is a little bit like leafing through the Michelin guide from cover to cover. Restaurant Tom Aikens? Yep. Midsummer House? Sure. The Ledbury? Absolutely. Maeemo? Oui, kokki… ​His mastery of the Michelin dark arts, paired with his passion for sourcing and foraging the best of the British larder, make him one of the brightest talents in the country. Lucky for us then that he’s planning to open a place of his own in the not too distant future, where dishes like ‘Wye Valley Asparagus, Wild Fennel & Smoked Eel’, ‘Miso Poached Skate, Dashi Butter Sauce’ and ‘Herdwick Lamb, Smoked Anchovy & Grilled Cucumber’ will showcase his “flavour first, produce driven, detail obsessed, fire fuelled cooking”. ​Meticulously sourced from growers and producers around these isles, Greg’s food is intrinsically linked to nature and the local surroundings.  Coming up... ​Carousel x Emily Scott @emilyscottfood ​ ​From her kitchen overlooking the sea wall at Watergate Bay, Emily Scott’s stunning seasonal cookery has made her eponymous restaurant one of Cornwall’s hottest tables. ​There, the region’s peerless local produce is the star. With knockout dishes like ‘Gurnard, cured in Emily’s citrus vodka, buckthorn, blood orange and green chilli’ and ‘Spiced Monkfish with roasted shallot, monkfish & vermouth sauce’ on the menu, it’s no surprise that Emily has been named one of the best chefs in the South West, as well as one of the most influential women in the industry. ​After a classical training in London and France, Emily made her name at the Harbour Restaurant in Port Isaac and the St Tudy Inn, a restaurant with rooms in one of Cornwall’s prettiest villages. Representing the South West on Great British Menu, her pared back, produce-led style earned her critical acclaim, while her debut cookbook, Sea & Shore: Recipes and Stories from a Kitchen in Cornwall, is a must-have love letter to her adoptive home. ​Emily joins us for five nights ahead of a busy, busy Cornish summer.

 Coming up ​Haikara ​PARIS ​17th-21st May ​ ​At @haikara_restaurant, Sho Miyashita and Jérémy Mégaly have effortlessly picked out all the best bits of Tokyo’s casual izakaya culture and the easy-going Parisian néo-bistronomie of the 11th, and welded them together into a sake cocktail-fuelled riot of XXL flavours. Sparks fly with dishes like their “24-carat” (Le Fooding ©) karaage chicken, smacked cucumber kimchi and silken tofu doused in sizzling crispy chilli oil. For Sho and Jérémy’s week with us, they are serving up a double album of their greatest hits, served up in the form of cold plates, followed by hot dishes. ​ ​Small plates, huge flavours and a whole load of fun. Haikara is Paris at its confident best.

 Coming up... ​Thomas Coupeau @thomas__coupeau ​Paris  ​10th-14th May ​ ​Growing up in his family’s Vietnamese restaurant in La Rochelle, home of everyone’s favourite French textbooks, Thomas Coupeau has been cooking since he was old enough to wield a bottle of sriracha. A rising star of new wave French bistronomy, Thomas made his name at the impossibly photogenic Carbón in Paris, where his compelling brand of “fire grilled” alchemy set Le Marais alight. Imaginative and impeccably executed dishes like TC’s ‘Maldon Oyster, Scallop XO’, ‘White Asparagus, Shrimp, Elderflower’ and ‘Gnocco Fritto, Taramasalata, Parmesan’ are all love letters to the Maillard reaction (our favourite of all the chemical reactions). Charred bank holiday sausages this ain’t… Since flying the Carbón coop, Thomas has been busy forging a very successful solo career, popping up around the world with like-minded folks like the ONA Collective.
