Celebrating Italy’s “never-ending” regional specialities, rising star Olivia has put together a menu of seasonal crowd pleasers that pays tribute to the warmth and generosity of Italian home cooking as it once was. Think Venetian ‘zucca in saor’ (pickled pumpkin with onions and raisins); Liguria-style ‘pansotti al radicchio, salsa di noci’ (radicchio pansotti with creamy walnut sauce); and ‘bonet’ (amaretto and chocolate flan) from Piedmont. Cold weather comfort at its most delicious.

A new California icon in the making, Winnie’s is the next bold chapter for certified Young Gun Jacob Harth (Erizo, Place des Fêtes) and his partner in crime David Sisler (Saison**, SingleThread***). Creations like ‘caviar cured in kelp with chicken wing and sansho pepper’ and ‘BBQ lassen trout with dried scallop’ celebrate the bounty of the Bay Area in true bar-raising fashion.

Just metres from the Algarve coastline, Michelin-starred Vista is a celebration of super talent João Oliveira’s lifelong connection to the Atlantic. Expect thoughtful dishes like ‘scallops, charred pumpkin, and passion fruit’; ‘Algarve carabineiro, brioche, and goat butter’; and ‘black pork, eggplant, and Mediterranean jus’, shaped by his star-studded fine dining background.
