 Chinese-Malay (with a dash of Scottish) brilliance from @julielincooks. If your mouth isn’t watering yet, just wait until you smell it. Her ‘sate babi,’ ‘haggis pepper fry & papard,’ ‘fragrant aubergine,’ and ‘kari kambing batang kaki’ (roughly: the most delicious lamb shank you’ve ever tried) are bookended by a zingy salad and an indulgent sticky toffee pudding with pandan cream. Chinese-Malay (with a dash of Scottish) brilliance

 There’s no stopping Edinburgh hyper-talent, Tomás Gormley. Awarded a Michelin star in record time at debut restaurant Heron, Tomás did what any sensible chef would do and opened another one straight after. Tricky second album it wasn’t. Low-lit, and tinged with the reddish glow of its four-letter neon sign, Stockbridge small plates gem @skua.scot quickly became a neighbourhood favourite. And now his latest venture @cardinal.scot takes flight: a hyper-local, 24-seater with an open-fire grill and an unmistakable sense of place. You may remember Tomás from his star turns at Burns Nights past. Now he’s back for a full week, with a contemporary Scottish menu showcasing his new project at its spectacular best. Warm-up acts like ‘Gougère, Black Truffle, Fermented Wild Garlic’ and ‘Sea Trout, Taramalata, Whisky Ponzu, Blood Orange’ are followed an early contender for dish of the year: Belhaven lobster tail, poached in lobster shell-infused butter smoked over old Mac Talla whiskey barrel staves, served with Pink Fir potatoes, lime gel, and a velvety bisque (a nod to his formative years at two-star Restaurant Andrew Fairlie). Burns Night 2025 just so happens to fall on the final night of Tomás’ residency, but rest assured, every day’s a celebration with a menu as fantastic as this.  Next week we give you another flavour-packed menu of aromatic Nyonya-inspired showstoppers from Julie Lin’s Glasgow smash-hit, GaGa. We’re talking ‘Sate Babi’—pork satay in a peanut sauce (because, Malaysia); ‘Kari Kambing Batang Kaki’—Stewed Lamb Shank in Malaysian Coconut Curry with Turmeric Rice; and an epic ‘Gula Melaka Sticky Toffee Pudding with Pandan Cream’. A few weeks back, we celebrated Carousel’s 10th birthday with a party to remember. We invited some of our favourite industry folk, friends, and alumni for a night of great food, killer drinks, and all the good vibes. It was a chance to reflect on how far we’ve come—thanks to the amazing people who support us, the incredible network of suppliers we rely on, and the team that keeps this whole crazy thing going. Here’s to the next 10! Huge thanks as well to our friends at @thelostexplorer for keeping the mezcal flowing all night…

A few weeks back, we celebrated Carousel’s 10th

@julielincooks returns to Charlotte Street just in time for Christmas, with another celebratory menu of vibrant Chinese-Malay showstoppers, inspired by the Nyonya flavours of her childhood. As her award-winning smash-hit, @gaga.glasgow, continues to go from strength to strength, Julie has been busy penning her hotly anticipated cookbook Sama Sama (literally, ‘you’re welcome’), which hits the shelves next year. Honed at cult pop-up Julie’s Kopitiam, her infectious agak-agak style is all about cooking with soul and creating accessible dishes with explosive flavours like ‘fried chicken, Sichuan hot sauce, orange zest’; ‘pink kerabu noodle salad, samphire, peanuts’; ‘spiced ground sausage, crab claw meat, summer greens’; and ‘Kaya Croissant-and-Butter Pudding’ (if you still have room). In the words of the Michelin Guide, GaGa is “lively, delicious and great value [with] all the ingredients for a fun night out”. We couldn’t put it better ourselves. See you there.
