In collaboration with @thelostexplorer Matthias has curated a standout line up of drinks, think ‘Wild Garlic Salmiana Mexcal Martini’, ‘Fig Leaf Ramos’ and a ‘Tomato Tommy’s Margarita’ - who knows you might even be able to snag yourself a mezcal pickleback👀 And because it’s not a takeover without some music right?  Last week a few of the team swapped Fitzrovia for the Cambridgeshire countryside to visit one of our key suppliers @flourishproduce They spent (a very rainy) day learning about how owner Calixta and her team work on improving the soil and biodiversity of the little piece of land they call home. Their use of regenerative agriculture practices ensures they’re setting the farm up for decades of deliciousness. Finding inspiration from their visit, our Head Chefs Ollie and José, are already working on how to bring in some more of the excellent produce to find its way onto our menus throughout the Summer season. With Flourish mustard greens currently available as part of our Mangalitza Pork Chop dish on the 𝗟𝗲𝘁 𝗨𝘀 𝗖𝗵𝗼𝗼𝘀𝗲 Wine Bar set menu (featured on the reel we did last week). Dishes are served fast, fresh, and frenetic with everything meant to be shared — with friends, with strangers, with sticky fingers and wide eyes. The duo have turned the market stall into one of Madrid’s most exciting culinary experiences so you’d be mad to miss it. Wong** for a week of high-energy, high-skill cooking that celebrates the combination of traditional Chinese cuisine enriched with Western techniques and influences. Born and raised in Hong Kong, Jacky’s journey began in the familiar hustle of the British-Chinese takeaway (owning not just one, but several), before the lure of fine dining finally took hold. Jacky cooks with reverence for where he came from and real curiosity for where things can go. It’s one for the books, a technical, expressive and eclectic journey full of flavour. A driving force behind the scenes at Carousel, Head Chef José has been instrumental in shaping the food in the Wine Bar and keeping the wheels turning on countless guest chef residencies. Forged by formative years in restaurants like Meroma CDMX, Nicos CDMX, Relae* and working alongside groundbreaking chefs on a weekly basis, it’s time for José, under his Pachi alias, to take the reins of the guest chef kitchen. This residency is more than just a guest chef, it’s a sobre mesa in full swing, best described by dishes like ‘Fideo seco’ a cantina favourite and one of José’s signature dishes, ‘scallop ‘burnt’ aguachile’, ‘suadero quesadilla’, ‘Mole ‘encacahuatado' peanut mole’ and ‘Prawn & octopus ‘acapulco’ ceviche’. It’s generous, gutsy cooking with a refined edge — exactly what you’d expect from someone who’s been in the room with the best. A vegetarian menu will also be available.

 In the guest chef kitchen this week we’re joined by the culinary powerhouse, Tomás Bermúdez. His New Orleans-inspired oyster bar, La Docena, combines fervorous Mexican flavour with a laser focus on sustainably sourced seafood. Tomás shares the first of a double-header of seafood platters (two’s always better than one, right?), with ‘scallop, chiltepín aguachile’, ‘Oyster, bergamot mignonet, fig leaf oil’ and ‘Razor clam, pico de gallo, salsa macha mayo’. So what happens when one of Mexico’s finest swaps the Pacific for the cold, clear waters of these shores? You’ll have to join us this week to find out.

 Fresh from six years at three-Michelin-star L’Arpège under the tutelage of Alain Passard, Korean rising star Jihyun Kim is gearing up for a Parisian opening of her own: Ébène. Born in Korea, classically trained in France, Jihyun Kim’s food combines the clarity of French technique with the quiet intensity of Korean flavour. Her impeccable CV includes stages at Têtedoie* (Lyon) and Septime* (Paris) but it was her time as sous chef at L’Arpège that opened her eyes to the art and artistry of vegetable-led cooking; building depth from simplicity, using smoke like seasoning and plating with purpose. Now Jihyun is ready to strike out on her own. Opening in Paris later this year, Ébène – a collaboration with pastry chef and partner Simon Plantrou – promises to light up the city of gastronomic excellence.
