Next up in our Sustainable Supper Club series we have the hotly anticipated four-hands dinner from Tommy Banks, holder of two Michelin stars (one each for The Black Swan at Oldstead and Roots in York), and Ivan Tisdall-Downes of Native at Browns in Mayfair, winner of this year’s Rémy Martin Sustainable Pairing challenge.
Ivan blew the judges away in July – Tommy included – with his dessert of ‘Wild Mushroom & Apple Baked Alaska’, paired with the tropical pineapple notes of Rémy Martin Tercet.
Now the two are teaming up for a very special one-off, featuring the likes of ‘Brioche, Pear, Pickled Walnut & Truffle’ and ‘Mallard, Beetroot and Elderberry’ from Green Star holder Tommy and ‘Fish Toast with Crispy Sea Lettuce & Damson’ and that dessert from Ivan, whose commitment to natural, foraged and seasonal produce was honed at River Cottage HQ in Devon and Blue Hill Farm at Stone Barns, New York.
Thanks to our partners, the imaginative set menu is excellent value at just £65 and is bookended by a signature Rémy Martin apéritif and digestif.
