Growing up in his family’s Vietnamese restaurant in La Rochelle, home of everyone’s favourite French textbooks, Thomas Coupeau has been cooking since he was old enough to wield a bottle of sriracha.
A rising star of new wave French bistronomy, Thomas made his name at the impossibly photogenic Carbón in Paris, where his compelling brand of “fire grilled” alchemy set Le Marais alight. Imaginative and impeccably executed dishes like TC’s ‘Gnocco Fritto, Taramasalata, Parmesan’; ‘White Asparagus, Shrimp, Elderflower’; and ‘Turbot, Pepper Sauce, Spring Onions, Samphire’ showcase Thomas’ unique way with seasonal produce and his unwavering commitment to food that is never anything less than super effing tasty.
Since flying the Carbón coop, Thomas has been busy forging a very successful solo career, popping up around the world with like-minded folks like the ONA Collective. His week with us is Thomas’ first London cooking adventure. Get ready for five nights of white-hot instant classics.
