Freshly minted at a ceremony in Bangkok, Thailand’s very first female two-Michelin star chef is the supremely talented and refreshingly down-to-earth Tam Chudaree Debhakam.
At Baan Tepa – #45 in Asia’s 50Best – the 31 year-old has transformed her grandmother’s Bangkok family home into a truly immersive culinary space. Here Tam and her team take guests on a culinary voyage across Thailand, with a succession of beautifully-balanced contemporary Thai creations that showcase the finest local produce they can get their hands on (much of it grown on-site). Think ‘Tom Yum Consommé, Langoustine, Lacto-Fermented Tomatoes and Black Trumpets’; ‘Grilled Pork Jowl, Tamarind Jaew and Papaya Fermented Fish Salad’; and ‘Koji-Aged Flank Steak, Roasted Curry, Baked Pandan Rice, Pickles’.
Tam’s locavore approach is influenced in part by Dan Barber, her old boss at Blue Hill at Stone Barns, New York, but more than anything, her extraordinary menus are a celebration of the livelihoods and craftsmanship of Thai producers up and down the land.
