Fresh back from her latest sell-put pop-up in Gothenburg, chef Tintin Jonsson, better known as Swilipino, joins us in No. 23 for a three-night residency.
Tintin’s food is unlike anything you’ve tried before. Drawing on her dual Swedish and Filipino heritage (hence the name), as well as flavours and techniques picked up from years working as a chef at East London hotspot My Neighbours the Dumplings, her menus are an always-colourful marriage of bold, global flavours and beautifully contrasting textures.
Think deep-fried cassava tots with black bean & mushroom adobo; chicken skewers with charred coconut sauce and hibiscus-pickled shallots; stuffed tofu puffs with peanut sauce; and ‘Kladdkaka’ (sticky Swedish chocolate cake) with roasted hazelnuts, torched blood orange and whipped cream. Y-U-M.
