The relocation of the impossible-to-book Osaka-based Sushi Saeki to the breathtakingly beautiful grounds of Kyoto’s historical Nijo-jo castle has created a sensation in the sushi world.
Reservations at the original Osaki Saeki – long considered the best sushi in the city – were only available to locals, so the softening of this stance, together with 2.0’s eye-catching new surroundings have been understandably big news.
Bold yet refined, acclaimed itamae Takashi Taniguchi’s approach brings contemporary flair to traditional Edomae techniques. Guests begin the tasting menu experience with five appetisers, featuring dishes like Taniguchi’s signature crab chawanmushi; squid and caviar; and scallop tempura. These are followed by the main event, ten immaculately prepared nigiri, featuring heirloom Shiga Prefecture sushi rice. These include torotaku, a rolled sushi delicacy combining buttery fatty tuna with the refreshing crunch of takuan pickled daikon radish and shoyu ikura, soy sauce-infused salmon roe from Hokkaido.
It’s been a while since our last omakase experience at Carousel. If ever a residency was worth the wait, Sushi Saeki is it.
