Rising stars of the Israeli new wave, Roy Hyams and Adar Lotan head up the kitchens at two of the country’s hottest wine bars; ‘Nachum’, in Haifa, and ‘Brut’, in Tel Aviv.
The talented pair bonded over a passion for playful experimentation. At ‘Nachum’ – and tasting menu restaurant, ‘Kadosh Ve Parua’ (wild and holy) – Roy’s bold, imaginative flavours make the most of what the seasons have to offer, while Adar’s inquisitive, heartfelt cooking at critically-acclaimed ‘Brut’ takes inspiration from both Levantine traditions and French gastronomy. The results are thrilling.
Together the friends have teamed up for a series of one-off dinners around Israel and the USA, but this will be their first time cooking in London. Here Roy and Adar will bring the very best of Israel to the table, with a killer menu featuring some exciting new dishes created just for us. Excited? You bet we are.
