Kicking off our Murra series, we’re joined by Nino Rossi of Michelin-starred Calabrian gem, Qafiz.
Qafiz is a small but mighty 12-seater restaurant in one of the most idyllic locations going, set within an eighteenth century villa surrounded by olive trees in the tiny village of Santa Cristina d’Aspromonte. At the helm, visionary local Nino is giving a new voice to Calabrian cuisine, showcasing its rich diversity and proving that it’s so much more than just chillies and ‘nduja (but don’t worry, there’ll be a little of that too…).
Drawing on the bounty of the breathtaking surrounding Aspromonte mountains, Nino’s hyper-local, hyper-seasonal tasting menus feature beautifully balanced, impeccably plated creations like ‘Beef, Black Chestnut, White Fir, Chard’; and ‘Tubettoni, Pappaluni Bean, Lobster, Tropea Onion, ‘Nduja, Bay Emulsion’. It is dishes like these that have not only earned Qafiz a well-deserved Michelin Star, but have also prompted a whole new movement of people into a previously seldom-trodden area (including a visit from the main man himself, Stanley Tucci, in his latest series of Searching for Italy).

We’re kicking off 2024 with Murra, a chef residency mini-series in collaboration with Rome’s Cultivar Studio bringing four of Italy’s most exciting culinary talents to London for four epic, back-to-back residencies. We’ll be working with Natoora to provide our four Murra chefs with the best seasonal produce they can get their hands on.
