One of Melbourne’s most coveted bookings (and that’s saying something), Navi is the very personal project of Yarraville renaissance man, Julian Hills.
Served on delicate tableware that Julian makes himself in his home studio, Navi’s beautifully intricate tasting menus reflect Julian’s infectious nerdiness for unique pairings and innovative techniques. Dishes like ‘venison carpaccio, herbs, salted egg yolk’; ‘langoustine, radish, Earl Grey’; and Navi signature, ‘black garlic and salmon roe macaron’, bring creative whimsy to some truly excellent local ingredients.
One of Australia’s most exciting chefs – he was named ‘Chef of the Year 2023′ by Australia’s Good Food Guide – Julian grew up on a 40-acre farm in Victoria’s Strzelecki Ranges where raising animals, fishing, gardening, foraging and hunting were part of daily life. It is this deep-rooted connection between the land and the plate that guides Julians’ ethos at Navi, and which promise to make his week with us one of the true highlights of the summer.
