Opening in Mexico City this autumn, Nácar is a contemporary izakaya from Brandon Arriaga that “merges Japanese sensibility with Mexican folklore”.
Few chefs have the experience or the imagination to pull off a concept that ambitious, but Brandon’s formative years speak for themselves. From Pujol** in Mexico City to Kong Hans Kælder** in Copenhagen and CHIUnE in Tokyo, Brandon’s career to date is characterised by the rigour of classical French cuisine, the “sensitivity, skill and romanticism” of Japanese kaiseki cookery, and more recently, an exploration of his Mexican roots.
For Brandon’s week with us, he’s created a short, sharp, super approachable izakaya-style menu inspired by Mexico City’s food culture, featuring showstoppers like ‘Drunken crab sope’, ‘Smoked scallop, douchi, salsa macha’, ‘Grilled sake kasu guinea fowl, sourdough tortilla’, ‘Hake tiritas, yuba, guacachile’ and ‘Langoustine shinjoh, cabbage, epazote’.
