One of Europe’s brightest young talents, Azerbaijan-born Mirali Dilbazi opened his eponymous debut restaurant ‘Mirali’ in Kyiv in late 2021, changing the capital’s fine dining landscape forever with a new Ukrainian cuisine focused on unlocking the potential of each rigorously sourced ingredient.
Built around local, seasonal produce, Mirali’s ever-evolving tasting menus cleverly play with textures, colours and weird and wonderful fermentation techniques to breathe new life into familiar Ukrainian ingredients. Though Ukrainian at heart, Dilbazi draws on techniques from different cultures, including his Azerbaijani roots, to create impressively innovative and seriously delicious dishes like ‘Koji Sushi, Ikejime Trout, Sea Buckthorn Kosho’; ‘Oyster Dolma, Suzma Cheese, XO Sauce’; and ‘Smoked Mushroom, Bread Miso Sauce, Charred Leek’. It is this highly imaginative and thoughtful approach that landed Mirali a well-deserved place on the 50Best Discovery list.
Just four months after Mirali’s hotly anticipated opening, the Russian invasion of Ukraine forced the restaurant to close its doors, but the resilient young chef didn’t stop there. Dilbazi spent last year selling out residences across the globe, including Fulgurances Laundromat, New York, and Mrs Robinson’s, Berlin,before finally reopening the doors at Mirali in May.
