Founder Santiago Muñoz is on a mission to revive maíz criollo, Mexico’s heirloom corn. After opening an insanely popular tortillería in Roma, Chef Santiago expanded his vision with this groundbreaking three-in-one destination in Condesa, combining a mill, taquería, and restaurant under one roof. Fresh tortillas crafted daily using exclusively nixtamalized heirloom corn provide the base for innovative dishes like their ‘prawn taco with “mojo isleño” & habanero mayo’; their celebrated ‘Wedding Tamal’—a delicate corn tamal filled with stewed poblano chilli, pickled beetroots and chard in a rich axiote salsa; and ‘pork belly “poc chuc”, confit ox cheek and smoked black chorizo’ served with fried beans, green mole and piles of “salbute” and tortillas.
