What started out as a bit of fun to keep chef James Murray “out of trouble”, soon grew feathers and took flight, serving outrageously good, product-led chicken to the people of Edinburgh from a small hatch on an industrial estate in Leith.
With weekly specials and some next level yakitori running alongside the main event, JFC sells out in minutes. It’s so popular in fact that the police had to ask Jimmy to extend his opening hours to avoid overcrowding. The secret is in the quality of the chicken itself and the pedigree of the man behind the fryer.
With successful stints at Lyles, Le Manoir, NUR in Honk Kong and the pioneering Edinburgh Food Studio under his belt, Jimmy effortlessly joins the dots between farming, delicious, seasonal, intelligent cooking and fast food.
