Argentinian superstar Javier Rodriguez returns to Carousel, ten years to the day since his first Carousel residency (and ours…).
Ranked among the top one hundred restaurants in Latin America, Javier’s very personal project El Papagayo champions regional traditions and techniques from central Argentina, and sits at the heart of a mini gastro-empire that has sparked a nationwide culinary movement since Javier first graced our kitchen back in 2014.
El Papagayo’s twelve-course tasting menu reflects Córdoba’s unique geography, and Javier’s formative years in cutting edge kitchens around the world (Noma, Tetsuya’s, Restaurant Andre…). Of course there’s red meat – of the dry-aged ribeye variety, cooked with intense heat and patience – but Javier’s beautifully executed repertoire of elevated serrano flavours also includes more unusual combinations like ‘Lamb & Roasted Fig Tartare, Yogurt, Zucchini Flower’; ‘Humita, Smoked Scamorza, Spicy Spring Onion Sauce’; and ‘Grilled Flatbread, Roasted Bone Marrow, Butter’.
