A thrilling new voice in London’s ever-evolving Chinese dining conversation, Jacky Chan joins us from the hallowed kitchens of A. Wong** for a week of high-energy, high-skill cooking that celebrates the combination of traditional Chinese cuisine enriched with Western techniques and influences.
Born and raised in Hong Kong, Jacky’s journey began in the familiar hustle of the British-Chinese takeaway (owning not just one, but several), before the lure of fine dining finally took hold. He closed the shops and swapped the woks for water baths, honing his craft at spots like The Pony & Trap* (Bristol) and Bo Innovation** (Hong Kong).
Jacky cooks with reverence for where he came from and real curiosity for where things can go. His residency is a bold, flavour-forward take on the ever-shifting dialogue between Chinese and British food culture — and we can’t wait to pull up a chair.
