As a chef with proudly indigenous roots, Hugo Durán has developed an unmistakable culinary language of his own, inspired by his travels through central Mexico, Oaxaca and the Yucatán, and his lifelong fascination with the biocultural diversity of his homeland.
Hugo’s food is made for sharing, the central tenet of the culinary culture that he lives to celebrate. At Ka’an, in Tulum’s national park, standout dishes like ‘Hoja Santa-wrapped Snapper with Citrus and Huitlacoche’ and ‘Chayote and Mountain Potatoes’ paid homage to Mayan culture, earning him critical acclaim. Now splitting his time between CDMX and the rest of the world, Hugo’s sell-out pop-ups attract chefs and foodie adventurers alike, who share a common desire to reconnect with their roots through the diverse flavours of Mexico.
Returning for a third spin on the Carousel, Hugo will once again reinterpret the flavours of his Mesoamerican heritage through the lens of the very best British produce. Think ‘Langoustine Taco, Coloradito Mole’; ‘Crispy Pork, Pistachio Mole, Pickled Plums’; and ‘Rosita de Cacao Infused Strawberries, Elote Sorbet, Marzipan’.
