After the runaway success of her eponymous Lyme Regis pop-up, Harriet Mansell opened Robin Wylde to critical acclaim in 2020, its ever-evolving tasting menu experience an instant hit. A little sister followed a year later, sustainably minded restaurant and wine bar, Lilac. Celebrating the diversity and abundance of wild West Country produce, the two have breathed new life into the Dorset dining scene, cementing Harriet’s status as one of the UK’s most exciting talents.
Harriet is a passionate advocate of the region’s peerless seafood and its array of incredible, locally grown ingredients, from edible sea herbs to fruits and berries ripened to perfection in the favourable southerly climate. Taking inspiration from the natural world, pickling, preserving and fermentation play a prominent role in Harriet’s artful approach to extracting every bit of flavour from her chosen ingredients.
