After the runaway success of her eponymous Lyme Regis pop-up, Harriet Mansell opened Robin Wylde in the autumn to critical acclaim with a nine-course tasting menu celebrating the diversity and abundance of ‘wylde’ West Country produce.
Devonshire born, Harriett is a passionate advocate of the region’s peerless seafood and its array of incredible, locally grown ingredients, from edible sea herbs naturally seasoned by the salty air, to fruits and berries ripened to perfection in the favourable southerly climate.
Taking inspiration from the natural world (and a formative three-month stage at Noma), pickling, preserving and fermentation play a prominent role in Harriet’s artful approach to extracting every bit of flavour from her chosen ingredients. Favourites from her opening menu at Robin Wylde include ‘Charred Carrot with Cobbett Cheese-Stuffed Vine Leaf, Honey Plums and Apple Marigold’, ‘Crab, Leaves, Sorrel and Mint with Crab Bisque and Lyme Bay Prawns’ and ‘Kid Goat, Crown Prince Squash and Blackberry’.
Harriet’s commitment to the wild foods growing along Dorset’s coastline, hedgerows and fields make her the perfect match for the third chapter of our Carousel x The Botanist series.
