It’s a huge privilege to welcome back one of our all time favourites to Carousel, Gísli Matt of Slippurinn, the international culinary destination nestled on the only inhabited island in Iceland’s far-flung Vestmanaeyjar archipelago.
Located in the shadows of a not-so-dormant volcano, and only open from June to August, family affair Slippurinn is a love letter to Icelandic culinary traditions. Fisherman father Audunn and siblings Gísli (kitchen) and Indíana (front of house) have earned critical acclaim far beyond the archipelago’s wind-swept shores, adding a delightfully contemporary twist to local recipes passed down from one generation to the next. They are also now the subject of a beautiful book from #goals publisher Phaidon (‘To eat at Slippurinn is blissful. To have Gísli Matt’s recipes is a gift.’ – Diana Henry).
Key to Slippurinn’s enduring success, of course, is Gísli himself, whose imaginative menus continue to push the boundaries of contemporary Icelandic cuisine. Working with the seasons, and foraging the majority of wild herbs and seaweed by hand, his goal is to convey his family’s passion for the islands and their lifelong dedication to the archipelago’s unique ecosystem. The results are evocative, totally unique and unfailingly delicious.
