Super fun, super different and unmistakably New York, Elisa da Prato’s “botanically driven, cosmically inspired Tuscan mountain fare” is a delightfully freewheeling marriage of eclectic flavours and memories: Elisa’s childhood in El Paso, TX; flower-picking in the Italian countryside; and candlelit, one-more-bottle evenings in Brooklyn loft apartments…
The result is an imaginative, bucolic style that riffs on the classics – unctuous, fresh-from-the-oven focaccias; to-die-for hand rolled pastas – with wild flowers, powdered tree barks and the slow-burning heat of Mexican chillies. Dishes like ‘Beef Tenderloin Carpaccio, Porcini, New Mexico Chillies’; ‘Ancient Roman Wood Pigeon, Date & Anchovy, Herb Salad, Onion Ash’; and ‘Orange Vanilla Tiramisu, Amaretti’ made experimental Barga trattoria, Elisa, and her most recent project, Etrusca, a hit with the critics. But free-spirit Elisa is already onto her next thing.
Joining us fresh from a residency in sun-dappled Silver Lake, Los Angeles, Elisa’s week at Carousel will be her first time cooking in London, and our first time twisting our forks around the likes of ‘Spago Rosso’, (Felicetti Monograno Spaghetti, Prawn Head, Heirloom Tomato, Calabrian Chilli, Nepitella, Wild Petals, Bottarga).
