When LeFooding® votes you Chef of the Year, you know you’re doing something right. Daniel Morgan, the Sheffield lad taking Paris by storm, earned the accolade for his imaginative, veg-forward creations at Robert in the 11th arrondissement.
Nature was the driving force there, with menus devised around whichever herbs, fruit and vegetables were delivered from the restaurant’s Loire Valley garden each week. Although not exclusively plant-based, Daniel made veg the star of the show at Robert, using innovative flavour combinations and expert cooking techniques fine-tuned over more than 15 years spent in some of the world’s best kitchens. Before (accidentally) settling in Paris, Daniel’s culinary voyage would make even the most seasoned traveller jealous. He spent a decade learning the trade in some of London’s best-known kitchens before embarking on a seven-year journey around the world, taking in Narisawa (Tokyo)** and Noma (Copenhagen)*** along the way.
Still based in Paris and working on his own projects, Daniel is returning to the city where it all began for his second Carousel residency. His experimental, hyper-seasonal menu is a reflection of his well-stamped passport, with dishes including ‘Canolo of Smoked Tuna Rillettes, Sour Cream, Confit Datterini, Pistachio’; ‘Vanilla-Braised Fennel, Kalamata, Parmesan Fondue, Tomato XO’; and ‘Grilled Peaches, Baked Raspberry Ice Cream, Genmaicha and Holy Basil Sauce.’
