5 years, 30+ countries, 50+ cities and 150+ residencies… Carousel is turning five (yes, five) and to mark the occasion as only we can, we’ve lined up a week-long carnival of flavour in the company of some of our all-time favourite guest chefs. Taking the reins for one night each, these legends will be serving up their greatest hits from residencies gone by. And the best bit of all? You’re all invited…
Kieran McLaughlin, LA BANCHINA, COPENHAGEN
Tuesday 24th September
Located on Copenhagen’s uber-trendy Refshaleøen waterfront (think Hackney Wick, only swimmable), everything at this ethically-minded seafood restaurant from ex-Relæ chef Kieran McLaughlin is biodynamic, locally-sourced and effing delicious. On the menu this time? ‘Tempura Trout, Elderflower Butter Sauce, Potatoes, Pickled Seaweed, Spring Onion and Ramson Capers’. Skidegod!

Inspired by the traditional recipes of her grandmother, Bà Ngoai, Céline been busy capturing the imagination of the French capital with her contemporary take on Vietnamese cuisine. For Céline, Vietnamese food is all about finding the perfect balance between ‘the refined’ and ‘the understated’, which is how you end up with the glorious ‘Banana Tarte Tatin’ on her latest Carousel menu…
Santiago Lastra KOL, LONDON

After earning his stripes at the likes of Mugaritz, Bror and NOMA Mexico, Santi has finally settled in London where he’s soon to open his debut restaurant, Kol. Santi specialises in using local ingredients to realise ambitious dishes like tostadas of ‘Lamb Leg Cecina, Gooseberries, Guajillo and Blue Corn’ that are rooted in his own Mexican heritage.

Last up? Carl Ishizaki, the “sushi Jedi” behind Stockholm favourite Sushi Sho and its daily-changing menu of awe-inspiring tsumami (‘drinking snacks’). The twelve- seater hole-in-the-wall boasts a Michelin star but stuffy this ain’t. Sushi Sho’s charm lies in its laid-back, unpretentious vibes and its gloriously fresh seafood and impeccable flavour combinations.
