Alice Arnoux is from the little oyster town of Arcachon on France’s Atlantic Coast. After training at the prestigious Institut Paul Bocuse, Alice got her break on the island of Noirmoutier, where Alexander Couillon took her under his wing at two-star La Marine. Fast forward to today and Alice has recently returned to France after three happy years in Denmark. After rising through the ranks at Noma, she moved out to legendary organic farm Birkemosegaard – lead veg supplier to the great and the good of Copenhagen’s dining scene – where she was entrusted with the summer season’s sought after farm-to-table experience. In her own words, “there’s been a lot of foraging, farming and fermenting in my life over the past couple of years”. A return home means a return to the seafood she grew up with and the opening of a first restaurant of her own in Bordeaux. For her week with us, Alice will be showcasing her instinctive way of cooking and her devotion to clean, simple flavours.
Alice is cooking up an 8-course menu of mouthwatering dishes like ‘Scallop Carpaccio Tacos with Malt Flatbread’, ‘Beach-Crab and Shimeji Consommé’ and ‘Smoked White Asparagus and Bone Marrow’.
Still just twenty-seven years old, Alice is scarily talented. Remember the name.
