Two years on from her last Carousel appearance, we were delighted to welcome Akané Monavon back into the fold.
Born in Burgundy to a French father and a Japanese mother, Akané is a chef with a truly international perspective. Working under legends like Virgilio Martínez and Dominique Crenn, she’s spent the last fourteen years cooking in renowned kitchens the world over – New York, Tokyo, Paris, London, Reykjavik, San Francisco and Lima – developing a laid back, French-Japanese style that’s delicate, understated and out-of-this-world delicious.
Akané joined us following a successful six-month residency at Fulgurances in Paris, where she’s set to open her first permanent restaurant later on this year. On the menu this time round? Extraordinary creations like ‘Steamed Razor Clams, Sunflower Root, Horseradish Labneh, Yuzu Ponzu and Kiwi’ and ‘Rabbit ‘Cacio e Pepe’ Gyoza’. Yes, you read that right. Rabbit ‘Cacio e Pepe’ Gyoza…
From bona fide legends to the superstars of tomorrow, each week we welcome a new chef into the Carousel family.
