A first-of-its-kind celebration of food and music from Carousel and AVA

Inspired by the rich and fertile creative terrain where food, music and experience overlap, {PAIRED} is a brand new collaboration with our friends from AVA launching this New Year’s Eve.
The idea is simple: pair the world’s most exciting chefs with the most respected DJs and musicians and watch as the magic unfolds.
Each pairing is a one-off, completely unique to that time and place and the audience who’s there to experience it.
The event brings together Pablo Díaz x Call Super and Emme Prieto x Yung Singh for a simultaneous multi-sensory experience across our two floors.
There are two sittings for each pairing (1.30pm & 7.30pm), featuring multi-course tasting menus and bespoke soundtracks. At 10.30pm, 150 more guests will join the party to see in the New Year with DJ sets from Call Super and Yung Singh.

Carousel and AVA will be donating a portion of ticket sales to two fantastic charities: StreetSmart and Midland Langar Seva Society. If you would like to get involved, a £10 donation per ticket can be added at checkout. The total raised will be generously matched by the artists.

PABLO DÍAZ Mercado 24, Guatemala City
At Mercado 24 – one of the top 100 restaurants in Latin America – Pablo has achieved cult status thanks to an imaginative locavore cuisine that’s completely unique to his cherished homeland of Guatemala. Meanwhile, side project Dora La Tostadora has revolutionised the country’s favourite snack, earning rave reviews internationally with legendary toppings that defy convention (think raw shrimp ceviche with fresh chile chocolate).
Call Super is the primary moniker of Joseph Richmond Seaton, a DJ and musician from London who has carved out his own place in the landscape of electronic music. Defined by a meticulous approach to the composition, production, art direction and presentation of his work, every release encapsulates his idiosyncratic vision. It is a colourful world that gives life to the shadows and throws a mist over the boundaries that have become so commonplace in electronic music.
EMME PRIETO Taverna, Mexico City
At Taverna, Emme’s unwavering commitment to simplicity, freshness and provenance has been hitting the high notes, singling him out as one of the rising stars of Mexican gastronomy. Emme’s life-long passion for cooking has taken him all over the world with his dynamic ‘Mesa Nomada’ project, but it’s the traditional flavours of Mexico that inspire him each day. Emme returns Carousel for a third time after sold out residencies in 2019 and 2022.
An open format DJ, Yung Singh’s sets can vary in genre from Garage, UK Funky to grime, jungle and DnB mixed with Punjabi folk, to sweet, nostalgic trance or hip-hop, and everything in between. “People are like: how am I supposed to define this guy?” Singh chuckles. “I am never going to allow myself to get boxed in” – if the last two years are anything to go by, expect the unexpected at a Yung Singh set.
