Offering a luxury weekend escape to just sixteen guests at a time, Guy Ritchie is reopening the gates of his Wiltshire estate for the return of "arguably the most exclusive supper club of the summer” (Times Luxx). The series features another stellar line-up of world class guest chefs who will each work their magic in the legendary director’s lakeside WildKitchen.

Expect bold stir-fries, punchy condiments, and hand-pounded pastes, showcased in dishes like langoustine crudo with saengwa vinaigrette and a show-stopping duck fillet with kra pao.

Former Mugaritz head chef Miguel Caño returns to La Rioja with Michelin-starred Nublo, a fire-driven celebration of the region’s rich culinary heritage. Housed in a 16th-century palacio, it strips back modernity with dishes like ‘Pork crackling, sea cucumber’; ‘Scallop in beurre blanc’; and ‘Veal loin with blue cheese,’ each a response to the land, shaped daily by the finest local, seasonal ingredients.

What if the Baked Alaska was born in Greece? You’d get something like PYRO’s Portokalopita: a baked orange pie with orange blossom curd, citrus leaf ice cream, and a splash of orange liqueur, set alight tableside for a little extra drama.

A legend of the Nashville dining scene, @the_catbirdseat has been at the cutting edge of American gastronomy since 2011, piquing global interest when Anthony Bourdain gave an appropriately glowing review in Parts Unknown. The intimate, chef-run counter has played host to some of the most exciting names in food, from its creators Josh Habiger and Carousel alumnus Erik Anderson to supertalents like Trevor Moran. Now in its sixth iteration, the keys belong to Tiffani Ortiz and Andy Doubrava. The duo behind @weareslowburn —a wildly progressive, roving pop-up—took the helm last year, bringing a closed-loop, produce-first approach shaped by a 42-state rolling residency. Cooking in North America’s most forward-thinking kitchens (Published on Main, Emmer & Rye), they built an arsenal of ferments, misos, and shoyus along the way. Each menu shaped by the last, their residency at Carousel pays homage to Tennessee’s farmers, serviced by a larder full of Catbird Seat treasures. Expect dishes like ‘Cured Golden Tilefish, matsutake mushrooms, buttermilk, mushroom XO’; ‘Oysters grilled over conifer branches, seasoned with forest flavours from the larder’; and ‘Cured pork loin, marigold vinegar, shagbark syrup’.

 This is @leocarreiraa’s ‘Rice Crab Sandwich with Ginger Lemongrass “Philadelphia”’, one of many knockout dishes on his menu this week. “The idea is to play with textures. Everyone thinks it’s seaweed holding this together, but it’s actually spring roll dough, topped with sushi rice and soy sauce. Inside, white crab meat—cooked without touching water to keep it briny—meets brown crab blended with soft-boiled eggs and morita chilli oil. Crunchy, soft, and dense. Briny from the crab, spicy from the chilli. On the side, my ‘Philadelphia’ has the texture of cream cheese, but made with ginger and lemongrass.  Seto Sousuke’s cooking is razor sharp, rooted in Japanese tradition and shaped by one hell of a CV. Remember the name. Inspired by his grandfather to become a chef, he started out at cult Tokyo spot, Celavird, before working on the iconic Cook Japan Project alongside some of the world’s very best (Alex Atala, Yannick Alléno, Dani Garcia). After a successful stint at Kadeau** in Copenhagen, he joined Virgilio Martínez for the opening of MAZ** back in Tokyo, and was most recently part of the kitchen team for Noma’s insanely popular Kyoto project. Now he’s back home, working on his own very personal project: the opening of an eight-seat counter dining restaurant in Tokyo later this year. There he will serve innovative dishes “inspired by Japanese cuisine with a Japanese aesthetic”. Seto’s Carousel residency is a flavour-packed preview of what’s to come; his 11-course menu includes refined masterpieces like ‘Sea bream cured with yuzu kosho, fermented daikon sauce, lavender oil,’ ‘Miso-cured grilled squid with fermented koji and beef fat sauce,’ ‘Grilled pork, Hoji tea sauce,’ and ‘Charcoal ice cream with yuzu.’ This is contemporary Japanese at its imaginative best.  The lovely @lizziethorne_flowers has created another bespoke piece for us, this time for No. 23. Hand-dyed corn husks, a nod to the humble origins of the beloved tostada. Using dried husks from one of our chefs, Lizzie mixed her own dyes with inks in brown, indigo, and denim, soaking them for days to achieve the perfect depth of colour, replicating the natural hues found in husks dyed by the corn itself.

Michelin-starred Nublo is a homecoming for Miguel Caño who earned his stripes at the revered Mugaritz**, rising to head chef at just 32. Now, he’s back in Haro, cooking on his own terms. Housed in a 16th-century palacio, Nublo is a love letter to La Rioja’s rich culinary landscape, set in the heart of Spain’s most celebrated winemaking region. Disruptive yet deeply rooted in tradition, the restaurant strips back modernity to its bare essentials, cooking dishes like ‘Sea bream with leche de tigre’ (served skewered on a flowering branch of elder) and ‘Bonito with sarmiento and green pepper’ exclusively over firewood. Each dish is a response to the land, shaped daily by the finest local, seasonal ingredients. As Elle puts it, “A celebration of nature in its most primary state.” The dining room, a glass-roofed courtyard enclosed by ancient stone, is presided over by an ethereally veiled figure—the goddess Nublo—the restaurant’s namesake and guiding spirit. Here, Miguel leads diners on a culinary journey through La Rioja, reimagining its ingredients with precision and creativity. @anaortiz_chef grew up between the Galápagos and the Ecuadorian highlands, eating fish and meat caught by her family and cooked straight over fire. When she moved to the UK, she didn’t change how she ate—she brought a slice of her heritage with her. This week, she’s serving up a smoky taste of home with dishes like ‘empanadas de viento’ (ember-cooked sweet potato empanadas with fermented cassava paste) and ‘conchas asadas’ (hay-smoked mussels with burnt chilli and tomato sauce).
