This utterly brilliant, neon fever dream of a ‘mod-Chinese’ restaurant is coming to London with a short collection of thrilling dishes that takes inspiration from different regions around China. Think ‘Xianjing-style Dan Dan Noodles’; ‘Ma La Beef, Spring Onion Pancake, Mint’; ‘Cool Eggplant, Pickled Chilli, Dill, Shaanxi Vinaigrette’; and ‘Prawn Toast Two-Way, Jiu Niang, Pomelo’.

The margarita - loved the world over -gets a fresh twist with our signature take. We start with Ocho Blanco tequila as the base, then add a kick of habanero for spice and a touch of basil for a refreshing, peppery twist. The result? A unique, lip-smacking spin on a classic that’s bound to leave you craving a second round. Or third, or fourth… You get the picture.

A real celebration of seasonal ingredients with layers of bold flavour, it’s the perfect addition to this week’s prix fixe lunch menu, available every Tuesday to Friday from 12-3pm in our Wine Bar.

 𝐂𝐚𝐫𝐨𝐮𝐬𝐞𝐥 𝐱 𝐏𝐚𝐮𝐥𝐢 Our buddy Kieran McLaughlin has finally fulfilled his lifelong dream of opening a place of his own, and yes, he’s knocked it out of the park. Introducing Pauli, Copenhagen’s latest home run. Kieran started out under Christian Puglisi at Ralæ, but we first crossed paths at La Banchina, on the Refshaleøen waterfront, where he oversaw one of the city’s best value, and most imaginative tasting menus. With a commitment to ethical local ingredients, Kieran quickly developed a cult following among the city’s chef community (his impromptu post-service jam sessions also became the stuff of legend). Fast forward to today and you have Pauli, Kieran’s captivating corner spot in Sydhavn. Underpinned by some very serious cookery, it’s the effortlessly laid back neighbourhood restaurant he always wanted to open. With a focus on ‘new Nordic’ cuisine infused with international influences, Kieran’s been making waves with bold creations like ‘squid with chanterelle, mussels and brown butter’; ‘lamb with beach kale, baby leeks, and tarragon’; and ‘strawberry & honey ice cream with rose, matcha, crumble, and bee pollen’. Three of the nine standout modern Peruvian dishes on Siete's (@7restaurante_) menu this week: 'Scallop with yellow chilli, roasted pomegranate, and leche de tigre'; 'Braised short rib fāxìao with fermented chillies, black vinegar, and stir-fried rice'; and the arguably perfect 'Tarta de Queso'—a Basque cheesecake with a subtle hint of blue cheese. Known for its fast-paced, laid-back vibe, Maizajo has quickly become a staple in Condesa, drawing in huge crowds every night with its iconic tacos served on freshly nixtamalized tortillas. Founder Santiago Muñoz is on a mission to revive maíz criollo, Mexico’s heirloom corn. After opening an insanely popular tortillería in Roma, Santiago expanded his vision with this groundbreaking three-in-one destination in Condesa, combining a mill, taquería, and restaurant under one roof.  Now gaining much deserved recognition outside of Mexico, we decided it was time to give the classic Paloma an English twist. Over in No. 23, our British Paloma combines the fruity notes of rhubarb with tequila and a hint of spice from pink peppercorns, all topped off with Three Cents grapefruit soda.

 Our guest chef this week is one of Latin America’s best restaurants, @humonegro_bog. Here’s chef Jaime talking through his electric menu inspired by the Colombian Caribbean, Amazon, and further afield.

Heirloom tomato with brown butter and fried parsley; grilled mackerel with mustard greens and fermented raspberry; and a hibiscus and strawberry ice pop. Proper lunch. Stop by between 12pm and 3pm this week or next to savour these flavours of summer (it isn’t over yet).

It’s a short but more or less perfect collection of dishes that takes inspiration from different regions around China. Think ‘Xianjing-style Dan Dan Noodles’; ‘Ma La Beef, Spring Onion Pancake, Mint’; ‘Cool Eggplant, Pickled Chilli, Dill, Shaanxi Vinaigrette’; and ‘Prawn Toast Two-Way, Jiu Niang, Pomelo’. At the heart of it all is chef patron, Michael Janczewski, who’s spent half his career cooking Chinese food in Hong Kong (at our fave, Ho Lee Fook) and Mainland China (most recently Canton Disco, where he co-created the restaurant’s extraordinary contemporary Chinese menu). Get set for BASTARD’s thrilling combo of market produce and traditional and modern techniques as Michael joins us all the way from Shanghai. We’re offering a shorter menu of BASTARD classics for this one, with staggered seating available from 6.30pm until late. Let us know of any dietary requirements when you book in. Due to the nature of this menu, we are unable to cater to gluten allergies or intolerances.

 This month’s guest chef line up: 27th - 31st August | Humo Negro, Bogotá | @humonegro_bog Ranked No. 44 in Latin America’s 50 Best, Humo Negro (‘black smoke’) is the full throttle Colombian izakaya from rock star chef Jaime Torregrosa. Inspired by Latin American, Nordic and Japanese flavours, expect firecrackers like ‘Scallops with Jamón Ibérico, Chayote’ and Purslane’ and ‘Poached Cod with Tucupi, Mountain Papaya and White Beans’, paired with cocktails from acclaimed bartender Manuel Barbosa. Think ‘Mezcal, Chartreuse, Pineapple and Sesame’... Hell yes. 3rd - 7th September | Siete, Lima | @7restaurante_ ‘Silverside Boquerón with Avocado, Tomato and Leche de Tigre’; ‘Braised Short Rib Faxiao with Fried Rice’; and ‘Soy & Mirin Tuna with Chive Oil, Pomme Purée, and Yuxiang’. If these flavour sound unfamiliar, you’re in good company. Combining the best of seasonal Peruvian ingredients with traditional Japanese techniques, ex-Rafael super chef Ricardo Martins is reimagining Nikkei cuisine at this Lima hotspot, one bold, fresh and acidic dish at a time. 10th - 14th September | Romy & Friends | @romygill Celebrating the launch of Romy Gill’s India - “the true essence of home-cooked Indian cuisine” - Romy returns to Charlotte Street for her annual Carousel pilgrimage. With one very exciting twist... Joining Romy in the kitchen throughout the week are five of her closest industry friends: Ellis Barrie, Ollie Templeton, Avi Shashidhara, Mike Reid and Anna Haugh. Each will be top-and-tailing all your favourite Romy Gill classics - plus some showstoppers from her new book - with their own Indian-inspired creations. 17th - 21st September | Mareida, London | @mareida.london Introducing Mareida, the hotly anticipated London opening with Chilean culinary icon Carolina Bazán and her sommelier wife Rosario Onetto. Incorporating influences from Patagonia to the Atacama, their playful menus will feature the likes of ‘Scallop Parmesana’; ‘Grilled Sea Bass, Quinoa, Avocado, Pebre, Chilli’ and theatrical petit fours of ‘White Chocolate, Passion Fruit, Black Sesame and Quinoa Moai’ (AKA Easter Island statues).

 Our guest chef next week is the full throttle Colombian izakaya @humonegro_bog from rockstar chef Jaime Torregrosa and one of Latin America’s most renowned bartenders, Manuel Barbosa. At Humo Negro (and for their Carousel residency), each dish can be paired with an equally inventive and dangerously delicious cocktail. Think ‘Sea Bass Crudo, Green Curry and Squid Ink Tempura’ washed down with Manuel’s ‘Caribbean Rum, Limoncello, Herbs and Coconut’. Hell yes.
