From his Baja-style seafood platter to Cornish tuna with salsa tatemada, oyster mayo, and seed salsa macha, José Figueroa brings Tijuana’s bold flavours to Carousel—with a seasonal British twist. His tamal de Westcombe cheddar with nixtamalised winter tomatoes might sound like two worlds apart, but he brings them together beautifully. His @lacarmelitatj residency begins tonight, and it’s set to be sensational. Only a few tickets remain.

 @makanmx_ is the CDMX smash hit from Mario Malváez (@mario_malvaez) and Maryann Yong (@annieyongz) that’s taken the Mexican capital by storm. The talented duo met in Singapore, where they bonded over a mutual love of hand-pulled noodles. They also worked together in Thailand for Bangkok culinary royalty, Gaggan Anand (#5 in Asia’s 50Best). The menu at Makan – literally ‘to eat’ in Singaporean – reflects these travels, along with influences from Malaysia, Indonesia and Hong Kong. By day, they serve hand-made noodles and exceptional Chinese-style roasted meats. By night, they offer a short seasonal menu of satays, larbs, laksas and showstoppers like their now famous Hianese chicken & rice, that are all about simplicity and the quality of Mario and Maryann’s chosen ingredients. At Makan, you’re in all-killer, no-filler territory; bring friends so you can order one of each. By wildly popular demand, the modern Asian bistro relocated to a bigger site in Juárez last year, but it’s still nigh on impossible to get a table. He’s shaking up Greek cuisine with dishes like ‘courgette fritters with hot honey and sheep’s yoghurt,’ ‘cabbage souvlaki with XO bagna cauda and dukka,’ ‘alubia beans with smoked chestnut and taramasalata’ and ‘quince tatin with cardamom & coffee namelaka.’ His menu is a bold mix of flavours, rooted in his rich heritage and travels, executed to perfection. Guided by what’s local and freshest, Matías Romano and Miguel Lopez have reshaped Ibiza’s dining scene with an imaginative menu of certified bangers. Think deep-fried skate wing, given the chicken wing treatment with a tangy vinegar and paprika marinade, and served with ‘salad juices’ and a chilli emulsion. Or their pickled mackerel and Ibérico pork jowl brioche with confit garlic; their take on a classic almond ajo blanco, with confit fennel and herbs; or their shamelessly crowd-pleasing dessert of muscovado cake, chocolate sorbet and salted caramel. Hämbre is one of the island’s essential bookings, all the more so among off-season locals returning to island after the summer crowds have died down. Grilled Devon squid with friggitelli peppers and harissa—a fresh and fiery new addition to our prix fixe. Friggitelli peppers from Flourish Farm are paired with a hand-blended harissa made from roasted peppers, red chillies, spices, and sherry vinegar. Finished with salt, lemon juice, and olive oil, this dish delivers bold, smoky flavours with a citrus kick. It’ll be gone by the weekend, so swing by between 12-3 to make sure you don’t miss it.

Chuck George, Sokunthear Vong, José Lizzaralde, and Olia Hercules will each be taking over the kitchen, bringing their unique styles and flavours to the table. Quince poached in vin jaune, honey, juniper berries, and bay leaf, then soaked in a vanilla bean syrup, leaving just the perfect amount of bite. After years at the helm and over a hundred residencies under his belt, José is finally stepping into the spotlight to give London a taste of what he’s been perfecting behind the scenes. His menu? Kieran McLaughlin has landed at Carousel, and he’s brought the heart of @paulicph with him. Known for his game-changing flavours in Copenhagen, dishes on his menu this week include hot tomato consommé with mussels, trout roe & chilli emulsion on toasted milk bread, and his lip tingling beef tartare with chicken skin, fried Brussel sprouts, dijonnaise and piment d’espelette. This is ‘new Nordic’ cooking at its finest, infused with an international flair and that unmistakable Kieran touch. It’s technique-driven, boundary-pushing food from one of our absolute favourites. Don’t miss a taste of the restaurant making waves in Sydhavn.
