With experience at Pujol**, Kong Hans Kælder** and CHIUnE, Brandon blends classical rigour with the artistry of kaiseki and the soul of his native cuisine with a contemporary spin on CDMX street food, served kappo-style.

La Docena - Guadalajara

Roy Brett returns with another Scottish seafood tour-de-force, elevated with global influences that pay homage to the first spice boats docked in the port of Leith. Lauded by the critics of El País and El Mundo, the Colombian-Argentine duo Genaro Celia y Agustín Mikielievich, are on a mission to democratise the flavours and techniques of Asian-influenced Latin American fine dining with their white-hot Chamberí market tapas joint, Insurgente.
