Offering a luxury weekend escape to just sixteen guests at a time, Guy Ritchie is reopening the gates of his Wiltshire estate for the return of "arguably the most exclusive supper club of the summer” (Times Luxx). The series features another stellar line-up of world class guest chefs who will each work their magic in the legendary director’s lakeside WildKitchen.

@andydoubrava and @tiffani.l.ortiz of @the_catbirdseat are in the house this week with a menu that’s every bit as flavour-packed as the effort that’s gone into it. Think ‘Walnut cookie, chicken liver’, ‘Cured mackerel, calcified currants’, ‘Pork loin, whey, trout roe’ (AKA the Big Mac), and a dessert that needs to be tasted to be believed: ‘Bone marrow, berries, pine’.

 A classic across the Americas, the M&M shot — Mezcal from @thelostexplorer and Montenegro Amaro — gets a fresh twist at No. 23. Our version transforms it into a foaming highball with a cascading finish, layering burnt coffee and poblano chilli liqueur for a rich, herbaceous depth.

 Our new menu at @shoreditchartsclub_ is in full swing, bringing big Mexican flavours to the table. Think ‘Esquites with feta, lemon mayo & pickled onions,’ ‘Confit duck leg with pumpkin seed mole & greens,’ and ‘Mushroom carnitas with green pipián & herb salad,’ all served with heirloom corn tortillas and hand-pounded condiments.  To be ‘in the catbird seat’ is to hold the advantage, to know something others don’t. And if you know about cult-chefs @andydoubrava and @tiffani.l.ortiz, well, you know. We couldn’t be more excited to welcome them to Carousel next week. For over a decade, @the_catbirdseat has been a proving ground for America’s most progressive chefs, earning a rare nod from Anthony Bourdain himself in Parts Unknown. Now in its sixth era, the kitchen belongs to Tiffani and Andy, the duo behind @weareslowburn. This is an ephemeral masterclass in closed-loop, fermentation-driven cookery — an edible archive of techniques gathered from a 42-state pilgrimage through North America’s most forward-thinking kitchens (Published on Main, Emmer & Rye, and recently Sean Brock’s June). Their larder is deep: Appalachian misos, pine shoot honey, sarsaparilla shio koji. Sassafras and spicebush lend a sense of place, while aged hoja santa wraps ingredients in an earthy embrace before meeting binchotan flames. The fermentation program hums in the background, quietly reshaping flavours over weeks, months, even years. At their Carousel residency, expect thoughtful dishes like ‘Walnut cookie, chicken liver mousse,’ ‘Smoked beef heart carpaccio’ and ‘Mackerel, currants, smoked cherry.’ This is cooking that rewards close attention.  Tickets for @seto_sousuke’s residency this week disappeared before we could even shout about them. If you managed to snag a seat, get ready — his razor-sharp technique, flavour-packed produce, and unmistakable Japanese aesthetic are set to impress. Expect dishes like ‘Miso-cured monkfish, fermented koji & beef fat sauce’ and ‘Chalk stream trout, fermented tomato & green tea sauce, fig leaf oil’ to blow you away.

@goldfinch_cph is the perennially packed-out brainchild of acclaimed Aussie chef @will_king_smith, former assistant head chef at Geranium***. Drawing on his fine dining pedigree, Will brings precision and technique to the bold, social Cantonese flavours he grew up with in Australia. Tucked down a cobbled side street off Nyhavn and signalled only by its namesake Goldfinch, glowing in neon, this place feels like a hidden secret, more old Hong Kong than Copenhagen. The dining room hums nightly with off-duty chefs and in-the-know locals, spinning the lazy Susan and working their way through highlights like ‘Scallop toast with sesame & coriander chilli oil’ (with an optional dollop of Antonius Baerii caviar); ‘Shrimp & pork wontons, sweetened bean paste’; ‘Bao, boudin noir, sweetened soy’; and ‘Pork char siu’ with all the trimmings. This is a restaurant at the crest of Copenhagen’s New Asian wave, and it’s landing right here on Charlotte Street for five nights only. Don’t miss it.

 This summer, Guy Ritchie’s lakeside WildKitchen welcomes another stellar lineup of guest chefs. Curated by us, each chef will cook for one night only alongside our team, straight over fire and embers. But the chef’s table is just the beginning. Your home for the weekend is the estate’s “colonial Williamsburg-inspired farmhouse.” Imagined by Ritchie himself and brought to life by renowned antiques dealer and interior designer Edward Hurst, the farmhouse features six luxury en-suite doubles, each uniquely adorned with artworks and antiques from the family’s collection. Add to that leisurely outdoor pursuits, fireside nightcaps and a rather fantastic house menu in the Old Brewery from the Carousel team, available throughout the weekend, and you have a luxury country escape like no other. The series runs from May to September 2025, with en-suite double rooms available from £350 per night (for a minimum two-night stay). Breakfast is included. A cocktail list without a nod to the tiki classics? Unthinkable. But while many Piña Coladas tip too far into sweetness, this one is lighter, brighter, and dangerously crushable. A touch of mezcal adds depth, coconut water keeps it fresh, and crème de banane brings just the right amount of sweetness, balanced with citrus and salt. One is never enough.

 Basque for ‘George’, Gorka is the so-hot-right-now-you’re-going-to-need-a-fire-extinguisher project from George Husband (Brat, Bistro Union, Trinity) and George Brown (Camberwell Arms, Café Cecilia, Waterman Arms). The homonymous duo have been selling out residencies around town with their infectious mash up of classical French, regional Italian and – yes – Basque open fire recipes, techniques and moments of inspiration that after several iterations and a couple of bottles of wine, might lead somewhere else entirely. The two Georges like to colour outside the lines, and the results are never anything less than super tasty. Think ‘BBQ veal belly, oyster, chilli’; ‘Cajun ‘quenelles de brochet’, andouille sausage’; and ‘Secreto Iberico, koji, peanut mustard, grilled gem & betel leaf’. Every generation throws a hero up the pop charts. We keep our ears close to the ground, and from what we’re hearing, 2025 is set be Gorka’s. Tickets are in our bio.

Ely’s dessert this week is a fresh spin on a vintage French classic: nougat glacé. Traditionally a light, frozen mix of Italian meringue and whipped cream, this version is infused with Asian flavours: caramelised peanuts, ginger, lemon confit, and goji berries. A sliver of pineapple glazed with kalamansi syrup adds acidity, while a peanut tuile brings a touch of ‘gourmandise’.

 Next week, Michelin-starred @nublo.restaurant lands at Carousel for five nights only. Miguel Caño, formerly of Mugaritz**, strips modernity back to its bare essentials, cooking exclusively over firewood in a tribute to La Rioja’s rich culinary landscape.  This week’s main event from @elytrn0 is a bold take on a classic Laotian dish: a sharing duo of duck—confit leg, barbecued for a hit of smokiness, and tender fillet—served with a punchy sauce of reduced jus, holy Thai basil, and fresh green Thai pepper for that signature heat. It’s all part of a proper SEA-style feast, rounded out with stir-fried greens, a sweet and sour bouillon to reset the palate, and an Asian take on coleslaw for a refreshing crunch. In other words, Khantok—a spread designed to be shared.
