We begin 2026 with the fittingly named Carta Blanca, the borderless, genre-bending pop-up from Argentine Federico Tiseyra (El Celler de Can Roca***, DOM**, Ekstedt*, Contraste*), whose pastry chef background makes for a riotous culinary adventure through flavour. Carta Blanca never repeats a menu, but if Fede’s recent appearances in Singapore, Turin and Madrid are anything to go by, you can expect a hyper-original bombardment of flavour-bombs like ‘Grilled Scallop, Sichuan Glaze, Miso Pumpkin Purée, Mandarin, Wasabi Leaf’; ‘Sweetbreads, Hibiscus, Radicchio, Yoghurt, Watermelon Radish’; and ‘Juniper Raspberry Sorbet, Beetroot, Chocolate’, that blowtorch the boundaries between sweet and savoury.  We’re big fans of the classics but that’s not to say they don’t deserve a little glow up here and there. Meet our latest take on the Paloma. Taking The Lost Explorer mezcal and spicing it up a bit with a jalapeño infusion. Mix that with our in-house grapefruit cordial, a touch of super-juice and you’ve got yourself just the right amount of trouble. On now in No.23 - come and get it.

We’re always on the hunt for that perfect pairing, when dish and wine align for that most unique of sensual experiences. With that in mind, this week’s South African pairing in the Guest Chef dining room has been hitting all the right notes. Think Krone Cap Classique’s delicious expressions meet Ash Valenzuela-Heeger’s exquisite cooking in a journey that runs from the rugged coastline of the Western Cape to Ash’s adopted home in the Brummy West Midlands - where her 12-seater counter restaurant fuses her South African heritage with the best of British produce. Krone’s story begins on the historic Twee Jonge Gezellen estate, a family-run farm with more than 300 years of history. The estate vineyards climb the eastern slopes of Saronsberg Mountain, AKA “the rainmaker”, where cool air and ancient soils shape wines with real character. Exactly the sort of bottles Ash’s inventive dishes love to be around. We’re serving three of Krone’s vintage-specific cuvées: ‘Borealis Cuvée Brut’, ‘Rosé Cuvée Brut’ and ‘Amphora Blanc de Blancs’ for a pairing that captures the rhythm of South Africa’s coastline, glass by glass. For our final residency of 2025 we welcome industry power couple Jorge Luis Pabon (the food) and sommelier Alexis Morgan White (the wine) to Carousel, with their effortlessly charming, roaming new-wave New York wine bar, Mili. Taking inspiration from the likes of The Four Horsemen, Mili represents a looser, lighter, and altogether more relaxed new direction for the former exec chef of Estela* (one of our all-time favourites), who also counts El Celler de Can Roca*** and The French Laundry*** among his many illustrious career highlights. The precision’s still there, but the necktie’s off and the shirt’s unbuttoned. On the menu? Confident, maximalist flavours like ‘Monkfish, Spring Onion Sauce, Wilted Spinach’; ‘Wagyu Steak, Radicchio, Spicy Beet Sauce’; and ‘Pears, Vin Jaune Sabayon, Walnuts’, elevated by imaginative pairings from Alexis - including some truly outstanding bottles - that make each plate sing.  This week we have the pleasure of welcoming back Gal Ben-Moshe into the Guest Chef kitchen — a familiar face with a new story to tell. Fresh from opening Parzival in Prague, Gal returns to Charlotte Street with a renewed sense of purpose. After six Michelin starred years at 𝘱𝘳𝘪𝘴𝘮 in Berlin, he’s handed it back in favour of a new challenge. Parzival marks a shift — a move towards intuition over precision, curiosity over control. For his week with us, Gal is leaning into that sense of freedom. The fine-dining finesse is still there, but it’s lighter on its feet. It’s more expressive, more instinctive, more him. The menu captures that feeling: two worlds meeting head-on, ideas bouncing, flavours in full flight. To start, we’re running through two dishes that set the tone for the menu ‘Mussels Tempura, Chicken Toast, Sesame, Herbs Salad, Red Pepper and Walnut Cream’ and ‘Tuna, Black Radish, Fermented Apricot Dashi, Orange Blossom Water’. Underpinned by a deep understanding of fermentation and flavour development, Diego is a born innovator guided by a methodical, cerebral approach and a child-like curiosity for the new and the wonderful. Right now you can find him overseeing multiple exciting projects back in Lima, including Cosmos heladería (‘plant-based ice creams from outer space’), but it wasn’t long ago that he was working alongside our pal Dimitrios Moudious in the half light of a Chilean development kitchen. When Dimi says you need to get this guy in, you sit up and listen. And we’re grateful to Dimi that he did. Peppered with an apothecary of Andean and Amazonian ferments like cocona, macambo and smoked aji amarillo, Diego’s playful Carousel menu features imaginative remixes of Peruvian classics like ‘Chilcano’ (Peruvian dashi, roasted apples, charapita, chilli) and ‘Ceviche’ (hamachi, preserved fruits, tumbo, tonka bean, seaweed) that demand attention. For his week with us, Gal’s pulling out all the stops with a menu of Mediterranean-influenced firecrackers like ‘Mussels Tempura, Chicken Toast, Sesame, Herbs Salad, Red Pepper and Walnut Cream’, ‘Lamb Wellington, Coffee Jus, Onion Purée, Blackberries, Endive’ and ‘Cod Iskender, Tomatoes, Yoghurt, Bread, Brown Butter, Lamb Fat’. Featuring six courses, each with a very personal story to tell, the menu at Parzival marks a departure from the formality of Gal’s past: “It’s not supposed to be overly ostentatious. The era of fine dining is thankfully over.  Refreshing our Wine Bar menu is always a nice exercise, exploring new ingredients and different techniques that not only helps us keep it fresh for all of you who visit but means our chefs get to flex their creative muscles too. Hitting the menu this week, our ‘Grilled duck, quince & almond mole, pomegranate’. A bit of a showstopper, comforting, autumnal and delicious.
